Iraqi food films well because so much of it happens at the fire and at the table: a whole masgouf standing beside the flames, kebab over charcoal, broth poured over bread, syrup running over hot kahi. The details are easy to get wrong, though. Here is what to film, and the facts and names to get right.

Masgouf is said with a hard g; quzi, kubba, tashreeb, patcha and geymar all have several spellings. Use one consistently and put the Arabic in your caption — our Iraqi spelling guide lists every version.
