Iraqi kebab is deceptively simple: freshly minced lamb and beef, onion, parsley and a restrained hand with the spices — then everything depends on the fire. Our kebab is pressed onto flat skewers by hand and grilled over live charcoal, which sears a savoury crust in seconds while the inside stays juicy.
Alongside the Erbil kebab we grill shishlik (marinated lamb chops), shish tawook, kofta and mixed grill platters, plus grilled sea bass, zubaidi and tiger shrimp for the table. Everything arrives with grilled tomato and onion, sumac, fresh herbs and bread straight from the oven.
